Indian Food : Kheer Recipe

How to cook Kheer
Kheer is a milk pudding which can be made from rice, vermicelli or broken wheat. If served along with nuts and raisins it tastes excellent. This dessert is mainly prepared in South India but equally liked across India. Kheer can be prepared using various ingredients.

Ingredients:

Milk – 1 cup

Half cup of vermicelli, broken wheat or rice. In case you are using broken wheat and rice then you need to soak it for 20 minutes. For vermicelli this is not required.

Cardamoms – 8 of them peeled and powdered.

Soak 20 strands of saffron in 2-3 tablespoon of hot milk.

6-7 tablespoon of sugar.

For the garnish you need 12 pistachios and 14 almonds.

Preparation:

Boil the milk first and then let is simmer for some time.

Now coarsely grind the rice or broken wheat once you drain out the water. In case of vermicelli this is not required.

Now add the rice or broken wheat to the milk and stir it nonstop so that the ingredients do not stick to the vessel.

Now add saffron and powdered cardamoms.

Boil the milk till it thickens after adding sugar and then garnish the Kheer with almonds and pistachios.

Serve hot or cold as required.

Indian Food : Spinach (Palak) Recipe

Spinach (Palak) Gravy Recipe
Spinach is believed to be a healthy green vegetable which can be used in a variety of dishes. It is more delicious when made spicy and is full of vitamins and minerals.
Ingredients:

Around 1.5 cups of Spinach.
Around ½ cup of toor dal.
Around 1.5 tsp of cumin seeds.
Around 10 dry red chillies.
Around 3 tsps of grated coconut.
Around 4 flakes of garlic.
1 tamarind.
Around 4 tsps of tomato puree.
Salt.

Methodology:

Give 10 minutes to soak the dal and tamarind in 2 bowls of water.
Take a pan on medium flame and cook the spinach in water.
Take the cumin seeds, red chillies, coconut and toor dal in a food processor to make a smooth paste.
Now add the collected tamarind water, ground paste and puree in the spinach with some salt.
Season the dish and serve.

Indian Food : Moong Daal Recipe

Moong Dal Recipe
Lentils and gram form an integral part of Indian cuisine. Dal is prepared in various ways; the style of preparation of dal differs from one place to another. You can make dal from green gram, pigeon peas, split green gram, black gram etc. Every Dal is delicious and at the same time great for health. Let us now learn to prepare Moong Dal.

Ingredients:

Half a cup slit green gram (Moong Dal) soaked for half an hour.

Tomato – 1.

Turmeric powder – ½ teaspoon.

Chilli powder – ½ teaspoon..

Coriander leaves as per taste

1 green chilly.

Salt as required.

Ingredients required for seasoning:

Garlic flakes.

Oil as per taste.

Half teaspoon cumin seeds.

6-7 curry leaves.

Method of cooking:

Pressure cook the soaked green gram along with 2 glasses of water.

Add the tomato, green chilli and coriander leaves.

Now add the masalas along with the salt.

Pressure cook the dal for few minutes.

Now remove the cooked dal into a kadhai.

Add the seasoning and cumin seeds.

Mix the dal and serve with rice and roti.

Travel India: Tourist scams to avoid

For tourists all over world,  it’s hard to avoid meeting touts and scammers coming up with ever new tourist scams. These cheats are always looking for new ways of  stealing money from unsuspecting tourists. We have written this article to help tourists avoid losing money due to such scams .
Some common tourist scams faced by travelers
1) Let’s go to this shop owned by a friend of mine
For shady guides and taxi-drivers, it’s a very common line. They offer tourists a free tour of a shop, factory, showroom etc and claim that it’s just part of the tour or owned by a friend and they are under no pressure to buy anything. But once tourists enter the premises, salesmen don’t let anyone leave easily without buying anything. They will find any excuse to keep you in and it could go on for a long time. The unsuspecting tourists are very often tricked in to buying useless, overpriced items like  rugs, clothes or random trinkets at hugely inflated prices
2) Providing false information
This is also very common and there are numerous variations.  Latest one we heard was from an American guest of ours who wanted to visit Red Fort (Lal Qila) in Delhi. He was staying in a hotel  Paharganj, which is a drive of 15 minutes from Red Fort. When he started searching for an auto-rickshaw to take him there, a random guy from street came up to him and offered him to take him there in his ‘private car’, and for fare, quoted a price which was 6 times the fare of an auto-rickshaw. He tried to bluff by saying that  only private cars were allowed inside the fort due [...]

Travel by car or private vehicle in India

A car with driver is safest and most convenient  means of transport in India. Tourists can hire a car of their choice  and drive it themselves, if they have necessary qualifications.  But not every foreigner can handle the chaos of Indian roads. It’s much safer and potentially cheaper to hire a driver too. Approximate pay for a driver in most places is Rs. 150-300 per day. Quite often, it is inclusive of rent for the hired vehicle and the customer doesn’t pay for his food or hotel expenses. Depending upon condition and model, different vehicles can be rented for different prices.  Price per km for them varies between Rs 8 per km to Rs 20 per km for majority of models in market. Contrary to prevalent opinion, traveling in India during rainy monsoon season can be fun and cheap. Some people advise against it due to factors like blocked roads, unreliable weather etc. An unexpected flood or landslide can upset planned travel itinerary. Inspite of all this traveling in India during monsoons can be advantageous in a number of ways. One being tourists getting good discounts on high-expense factors like air fares, hotels.
