How to cook Kheer
Kheer is a milk pudding which can be made from rice, vermicelli or broken wheat. If served along with nuts and raisins it tastes excellent. This dessert is mainly prepared in South India but equally liked across India. Kheer can be prepared using various ingredients.

Ingredients:

Milk – 1 cup

Half cup of vermicelli, broken wheat or rice. In case you are using broken wheat and rice then you need to soak it for 20 minutes. For vermicelli this is not required.

Cardamoms – 8 of them peeled and powdered.

Soak 20 strands of saffron in 2-3 tablespoon of hot milk.

6-7 tablespoon of sugar.

For the garnish you need 12 pistachios and 14 almonds.

Preparation:

Boil the milk first and then let is simmer for some time.

Now coarsely grind the rice or broken wheat once you drain out the water. In case of vermicelli this is not required.

Now add the rice or broken wheat to the milk and stir it nonstop so that the ingredients do not stick to the vessel.

Now add saffron and powdered cardamoms.

Boil the milk till it thickens after adding sugar and then garnish the Kheer with almonds and pistachios.

Serve hot or cold as required.

Indian Food : Spinach (Palak) Recipe

Spinach (Palak) Gravy Recipe
Spinach is believed to be a healthy green vegetable which can be used in a variety of dishes. It is more delicious when made spicy and is full of vitamins and minerals.
Ingredients:

Around 1.5 cups of Spinach.
Around ½ cup of toor dal.
Around 1.5 tsp of cumin seeds.
Around 10 dry red chillies.
Around 3 tsps of grated coconut.
Around 4 flakes of garlic.
1 tamarind.
Around 4 tsps of tomato puree.
Salt.

Methodology:

Give 10 minutes to soak the dal and tamarind in 2 bowls of water.
Take a pan on medium flame and cook the spinach in water.
Take the cumin seeds, red chillies, coconut and toor dal in a food processor to make a smooth paste.
Now add the collected tamarind water, ground paste and puree in the spinach with some salt.
Season the dish and serve.

Moong Dal Recipe
Lentils and gram form an integral part of Indian cuisine. Dal is prepared in various ways; the style of preparation of dal differs from one place to another. You can make dal from green gram, pigeon peas, split green gram, black gram etc. Every Dal is delicious and at the same time great for health. Let us now learn to prepare Moong Dal.

Ingredients:

Half a cup slit green gram (Moong Dal) soaked for half an hour.

Tomato – 1.

Turmeric powder – ½ teaspoon.

Chilli powder – ½ teaspoon..

Coriander leaves as per taste

1 green chilly.

Salt as required.

Ingredients required for seasoning:

Garlic flakes.

Oil as per taste.

Half teaspoon cumin seeds.

6-7 curry leaves.

Method of cooking:

Pressure cook the soaked green gram along with 2 glasses of water.

Add the tomato, green chilli and coriander leaves.

Now add the masalas along with the salt.

Pressure cook the dal for few minutes.

Now remove the cooked dal into a kadhai.

Add the seasoning and cumin seeds.

Mix the dal and serve with rice and roti.
